The perfect crossover recipe

The perfect crossover: Delicious Belgian waffles and chocolate cake. These simply go hand in hand when it comes to creating perfect waffles. Incredibly simple to make. Crunchy on the outside, nice and fluffy on the inside and filled with chocolate. Very tasty!

Flour, cocoa powder, a pinch of salt…

To make these waffles, you need 10 minutes at most. The basic recipe is simple, so you can easily save it and I am curious to know if you will ever use another recipe after trying this one.

  • Whisk in a bowl the following ingredients for your waffles
  • Flour
  • Cocoa powder
  • Brown sugar
  • Pinch of baking powder
  • Pinch of salt
  • Make a well in the centre and then add all the wet ingredients to the bowl
  • Then mix all the wet ingredients into the dry batter until well mixed and smooth.

Not 100% smooth batter, suffer from lumps?

It’s fine if the batter is not completely smooth and it clumps slightly, however, it is better if it becomes a smooth whole.

Variation waffle irons

Waffle irons can vary quite a bit. Therefore, it is recommended to prepare the waffles according to your waffle iron manufacturer’s instructions. In terms of batter, you should use about ¾ cup per waffle. Some waffle irons require more to bake a waffle. On average, you can bake 4 to 6 waffles.

It is often not necessary to use a lot of butter/fat/baking powder with a non-stick waffle iron.

Bake the dough/batter until the waffles are golden brown. Put them on a plate and then add any toppings on top. Eat these waffles, for example, with a scoop of ice cream or melted butter, besides, eggs with them (during breakfast) are a very good combo!

Another additional tip, heat the waffle iron before mixing, that way the waffle iron will be nice and warm.

Try dark chocolate!

Want to taste those waffles really intensely? Then make the choice for dark chocolate! You have to love it, but if you really want to give that intense chocolate flavour to your recipes, then dark chocolate is definitely worth a try.

Vanilla extract

Love vanilla flavour? Then add some vanilla extract to the waffles. This will add that extra vanilla flavour to your ingredients, which is a really good combination!

Double batch?

You can make a double batch of these waffles just fine. Then you’ll have some leftovers for the rest of the week. You can store the waffles for several days. You can also serve these waffles even better with icing sugar, chocolate syrup or whipped cream, the possibilities are actually endless.

In a nutshell

So, a quick summary. We list everything again with the numbers. You will need:

  • 2 cups of flour
  • ⅓ cup unsweetened cocoa powder
  • ⅓ cup of brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 large eggs beaten
  • ⅓ cup of oil or melted butter
  • 1 ⅓ cup of milk
  • ½ teaspoon salt

And this is how you proceed:

  1. Put the flour in a large bowl with the sugar, baking powder, cocoa powder, salt and flour and whisk together
  2. Make a well in the middle; add eggs, oil or melted butter and milk. Mix until you get a smooth and nice batter.
  3. Bake the waffles according to the manufacturer’s instructions
  4. Serve warm with your favourite toppings!

Want to make a Nutella Ganache? Then melt ¼ cup of Nutella in the microwave for between 60 to 60 seconds. Here you then whisk in 3 to 4 tablespoons of milk. After 30 seconds, it will look shiny and smooth.

Cleaning tip: Do it right away

cleaning waffle iron

Cleaning is definitely not the most fun job there is but do it right away. Let the waffle iron cool down and start cleaning. A damp cloth is often enough. Otherwise, you will get stuck on dirt that you won’t get off again.

Besides, it is true that hot water gets rid of dirt better, but never use boiling water when cleaning a waffle iron! Some use boiling water for removable plates. However, this only damages the plates and therefore they will last much shorter.
